How much egg substitute do I add to replace an egg? 

Important: 1 egg is roughly 1/4 cup (4 tablespoons/60g/2oz) so you need to replace that volume in your recipe. Your egg substitute needs to equal the amount of egg you are leaving out. Most Damask recipes call for either 2 or 4 eggs. So, that would be either 1/2 or 1 cup of any substitute you choose. 

Unsweetend Applesauce 

I know, it's probably not what you expected. But, unsweetend applesauce is actually a great substitute for eggs. Applesauce helps to maintain the same light, fluffy texture that you would get with eggs. Just make sure it's unsweetened, otherwise you may find your cake is a bit too sweet. And don't worry, your cake wont just taste like apples when you're done. We promise. 

Flax Seed and Water

This is considered the official substitute for egg according to most professional bakers. This is our team's favorite because it doesn't compromise the flavor of the cake, and it keeps it light and fluffy just the same. Note this conversion: 1 tablespoon ground flaxeed + 3 tablespoon water = 1 egg. Just read the Damask recipe card and calculate accordingly. 

Banana 

1/2 of a medium banana is equivalent to 1 egg. We reccomend this subtitution for cake pops especially. 

Silken Tofu

If you're feeling like going on a health kick then this is the substitution for you. 4 tbsp of silken tofu is equivalent to 1 egg. 

Buttermilk

4 tbsps of buttermilk is equivalent to 1 egg. Buttermilk is an excellent replacement for eggs. However, if you or someone in your family has a dairy allergy please use an alternative substitution.
